I totally stole this recipe from a conversation I had on Facebook.
Making caprese couscous salad today. Mozz! Wilted spinach! Basil! Tomatoes! Balsamic!

Step one...wilt spinach in a bit of EVOO.

Step two...make and chill couscous

Step three...add some balsamic to break up and lubricate couscous.

Step four...make mozzarella cheese.
KIDDING!
Break your mozz pearls into individual balls.

Step five...get the pre-sliced, stolen-from-work tomatoes out of the fridge.

Step...whatever. Add a bit of basil to the mozz balls. Fresh or paste. Your choice but JUST A BIT.

Now mix! Slowly and with care as the tomatoes will come apart and I don't allow crying in the kitchen.

No raisins in this one since I used red apple balsamic vinegar.
